A light cookie witha crispy base and a chewy centre
Ingredients:
125 g unsalted butter
125 g caster sugar
125 g plain flour, sifted
100 g rolled oats
1 tablespoon milk
1 teaspoon bicarbonate of soda
1 teaspoon golden syrup
Directions:
1. Heat the oven to 150 C (300F ), gas mark 2
2. Cream butter and sugar together, then add the milk, soda and syrup.
3. Stir in the flour and oats and mix well.
4. Roll the dough into 24 small balls and place evenly apart on lightly greased baking sheets.
5. Bake for 25 mins until golden brown.
6. Cool on a wire rack.
