Pai Ika/ Cook Islands Fish Fingers |

Great served cold for school lunches. Ingredients:
2 cups cooked fish, cold |
1 cup sweet potatoes or 1 cup kumara, cold and mashed |
1 egg |
1 cup of left over vegetables, chopped finely |
salt and pepper |
breadcrumbs |
Directions:
1. Combine everything in a bowl and mash well with a fork. 2. Take spoonfuls of the mixture and roll into finger shapes. 3. Roll in breadcrumbs. 4. Fry in a little oil until golden brown. 5. Remove from pan and set aside to cool. 6. Store in the fridge. |
