Warm weather salad Ingredients:
1 cup regular rice |
1teaspoon saffron(to make the rice a pretty golden yellow,but adds to the dish flavor as will i beleive) |
chicken broth |
1/2 cup clear french (or) italian salad dressing with herbs. |
1cup frozen peas,thawed |
2 fresh tomatoes,peeled,seeded,chopped |
1/4 cup sweet green pepper,chopped |
1/4 cup green onion,sliced |
6oz of cooked lobster,broken in chunks |
5oz of cooked shrimp |
1 cup cooked chicken |
4 oz smoked sausage,sliced |
lettuce and tomato |
Directions:
1. Cook the rice in chicken broth,with saffron for about 25 minutes,or until broth is absorbed. 2. Stir in salad dressing. 3. Refrigerate for 2 hours. 4. Fold in peas,chopped tomatoes,green pepper and green onion,lobster,shrimp,chicken and suasage,may need to add a little more salad dressing. 5. Chill,serve on lettuce leaves,with tomato wedges. |
