Paella (frying pan) is a typical Valencian rice dish from Spain , cooked in a paella pan ( large, shallow, flat pan ) . It is usually garnished with vegetables and meat or seafood but the three key ingredients are rice , saffron, and olive oil . Ingredients:
10 g onions , chopped |
10 g pepper ( chared under grilled , plunged in cold water and skin rubbed off ) - discard seeds and cut into thin strips |
25 g tomatoes , remove seeds and chopped |
1 garlic , crushed |
300 g chicken , cut |
125 g meat , diced |
5 scrubbed mussels |
1 bay leaf |
500 ml stock |
100 g prawns |
125 g rice and shelled peas |
1/4 tbsp saffron |
Directions:
1. Brown the chicken and meat in olive oil for 10 mins . 2. Remove . 3. Add 2 tbsp olive oil and fry the onions and garlic briefly . 4. Remove garlic as soon as it begins to brown . 5. When onion starts to brown , add tomatoes , salt and cook for 10 mins . 6. Place the mussels in pan. 7. Cover and cook at high heat for 5 mins until shell opens . 8. In another pot place the chicken , meat , bay leaf and stock and cook . 9. Add prawns to boiling salted water for 3 mins and drain . 10. In a large paella pan , brown the rice . 11. Gradually add the cooking liquid meat , strips of pepper , peas and cook until the rice is tender . 12. Dissolve the saffron in water and stir into rice along with the remaining ing . 13. Mix well and place in hot oven for 5 mins . 14. The paella is ready to be served after having cooled for several minutes . |
