for people who don't eat red meat Ingredients:
1/4 pound turkey italian sausage, mild |
1/2 large onion |
2 garlic cloves |
1 tbsp olive oil |
2 cups chicken stock |
1/2 cup salsa |
1/3 cup uncooked rice |
1/2 teaspoon saffron |
1/2 pound chicken breasts, boneless and skinless |
1/2 pound shrimp, medium peeled and deveined |
1/2 cup peas, frozen |
Directions:
1. Cut sausage into 1/2 inch slices, discard casing. 2. Cook sausage, onion and garlic in oil in a 12 inch skillet until sausage is no longer pink. 3. Add broth, salsa, rice and saffron. Bring to a boil. Cover and simmer 10 minutes. 4. Stir in chicken. Cover and continue to summer 5 minutes. 5. Stir in shrimp and peas. Cover and continue to simmer 5 minutes. Remove from heat, let stand covered 5 to 10 minutes, until liquid is absorbed. |
