Pad Thai Stir fry in lean protein Ingredients:
2 tbsp fish sauce |
2 tbsp ketchup |
3 tbsp water |
2 tbsp chopped unsalted dry-roasted peanuts |
3 tbsp chopped green onions |
2 tbsp chopped fresh cilantro |
1/2 tsp crushed red pepper |
1 tsp vegetable oil |
2 tbsp chopped garlic |
1/2 cup egg beaters |
1 fruit lime |
3 ounces rice noodles |
8 ounces sprouted mung beans |
12 ounces tofu |
Directions:
1. Prepare rice noodles (rice sticks) by pouring enough boiling water over them to cover, then let sit 10 minutes. 2. In a wok, add the garlic cloves 3. When it's soft, add the eggs. Scramble with the garlic, then add the protein, bean sprouts, and the noodles to the party. 4. Mix ketchup through red pepper flakes to make a sauce and add in the sauce. 5. Plate with peanuts, sriracha and lime. |
