Pacifica Salad With Spicy Chicken |

However, both the type of salad and the dressing make this salad distinct. It's a great, late summer evening meal. Ingredients:
1 package pacifica salad by fresh express |
2 chicken breast halves |
mccormick's sweet and smoky rub |
olive oil |
Directions:
1. On a cutting board, use a mallet to pound the breasts into 1/2 inch thick meat slabs. Cut into 3 inch squares. Cover the bottom of a paper plate with mcCormick's Sweet and Smoky Rub. Dredge the chicken squares in the rub until thickly coated and immediately place in a hot skillet with 2 tbl olive oil added. Brown. 2. The Pacifica salad packet is a spring mix of lettuces, sweet pea pods, and slivered carrots. It also contains a packet of roasted soy nuts and roasted sunflower kernels, and a pouch of Poppy seed Vinaigrette. While the chicken squares are browning, divide the salad into two large pasta bowls and sprinkle with nuts. 3. When the chicken is deeply browned, remove to a cutting board and slice into 3/4 inch thick pieces. Add one chicken breast to each salad bowl and and top with 1/2 packet of poppy seed vinaigrette. 4. On a hot summer's evening, this salad goes very well with red wine or Sangria. 5. It doesn't get any easier than this. |
