Pacific Island Banana Donuts |

This is a very popular Pacific Islander dessert. Growing up on the island of Guam this was a favorite dessert prepared by my elders to enjoy during holiday and family gatherings. Ingredients:
2 cups sweetstacks gourmet pancake & waffle mix |
2/3 cups milk |
1 egg |
2 ripe bananas |
vegetable or canola oil |
1 ice cream scoop |
1 skewer |
Directions:
1. Mash ripe bananas in a bowl. Add milk, egg and SweetStacks Gourmet Pancake & Waffle mix to bowl and stir until ingredients are thoroughly mixed and batter is thick. 2. Pour oil into deep frying pan until pan is half full. Heat oil at medium heat until oil is hot. Use ice cream scoop to scoop batter from bowl and empty into hot oil shaped as a round donut (see photo). 3. Pour oil into deep frying pan until pan is half full. Sprinkle sugar on donuts (optional) or serve plain. |
