From a P90X Newsletter. Want some down-home goodness without having to go to the Colonel for a bucket of fat and calories? Try this high-protein treat that you can enjoy with just a few minutes of prep time. Now that's fast food! Ingredients:
8 boneless skinless chicken breasts |
3 tablespoons hot pepper sauce |
1 tablespoon worcestershire sauce |
1 teaspoon black pepper, freshly ground |
1 teaspoon salt (optional) |
2 cups whole wheat bread crumbs |
1 -2 tablespoon vegetable oil (canola, safflower, etc.) |
Directions:
1. In a large bowl, whisk together hot sauce, Worcestershire sauce, pepper, and salt (optional). 2. Add the chicken and marinate in the refrigerator for 2 to 12 hours. 3. Preheat oven to 425 degrees. 4. Remove chicken from marinade. 5. Add bread crumbs to marinade and mix well. 6. Coat chicken thoroughly with mixture. 7. Spread oil over the bottom of a shallow 9 x13 baking dish. 8. Arrange chicken in the dish and bake for 15 to 20 minutes. 9. Turn chicken over. 10. Reduce heat to 325 degrees; cook for an additional 15 to 20 minutes or until juices run clear when chicken is pierced with a fork. |
