A bit of a different cookie, but I'll bet you will love the soft and chewy, tart, yet sweet flavor that the pineapple will add to this lunch box favorite! A great choice for cookie exchanges too! Ingredients:
1 cup firmly packed brown sugar |
1/2 cup soft butter |
1 egg |
1 t. vanilla or rum extract |
1/2 cup raisins |
3/4 cup canned, crushed pineapple, undrained |
2 cups flour |
1 t. baking powder |
1/2 t. baking soda |
1/2 t. salt |
1/2 cup chopped walnuts or pecans |
Directions:
1. Combine brown sugar, butter, egg, and your choice of extract in mixing bowl. 2. Beat until fluffy. 3. Add raisins, and pineapple; mix thoroughly. 4. Combine flour, baking powder, baking soda, and salt; add to the creamed mixture and mix well. 5. Stir in nuts. 6. Drop by spoonfuls 2 inches apart on greased cookie sheets. 7. Bake at 375 for 12 to 15 minutes. 8. Makes about 4 dozen cookies. 9. May dust with powdered sugar while still warm if desired. |
