The oysters in NC have been great this year. Very little rainfall has made the oysters sweet and salty. Combine those with some crab meat.... culinary love on a half shell... Ingredients:
1 tbsp minced chives |
2 tbsp reduced-fat mayonnaise |
2 tbsp reduced-fat sour cream |
1/8 tsp salt |
1/8 tsp freshly ground black pepper |
2 bacon slices, cooked and crumbled (drained) |
1 (6 1/2-ounce) can lump crabmeat, undrained |
1 (1-ounce) slice white bread |
1 tsp butter, melted |
12 shucked oysters |
lemon wedges (optional) |
fresh minced chives (optional) |
2 cloves garlic minced (optional) |
Directions:
1. Set oven rack on the lowest position to prevent burning the breadcrumbs. 2. Preheat broiler. 3. Combine first mince chives, mayo, sour cream, salt, pepper, bacon, (garlic if desired) and crabmeat in a medium bowl; stir gently. 4. Place bread in a food processor; process until coarse crumbs measure 1/2 cup. Combine breadcrumbs and butter in a small bowl. 5. Arrange oysters on a broiler pan. 6. Spoon about 1 tablespoon crab mixture over each oyster; sprinkle each with about 1 teaspoon breadcrumb mixture. 7. Broil 7 minutes or until tops are browned and oysters are done. 8. Serve with lemon wedges and garnish with chives, if desired. |
