Ingredients:
2 pint(s) oysters with their liquid reserved |
2 cup(s) half-and-half or heavy cream increase as needed |
2 tablespoon(s) butter |
1/2 cup(s) dry white wine or sherry |
1 whole(s) onion - medium diced |
2 clove(s) garlic minced |
1 teaspoon(s) salt |
1/2 teaspoon(s) white pepper ground |
1 box(es) mushrooms sliced, optional |
Directions:
1. Saute onion and garlic in butter over medium heat about 5 minutes; optionally add mushrooms and saute a few more minutes. Add wine/sherry, oyster liquid, salt and pepper. Add half & half and stir until liquid begins to steam. Add oysters last when broth is ready and poach gently for about 3 minutes. Do not overcook or the oysters will be tough and rubbery! |
