A very flavorful dish. Some people consider this an appetizer, I make it a main meal. Ingredients:
2 (8-oz.) cans select oysters or 2 dozen fresh shucked oysters |
2/3 stick butter, cut into 1/3 pieces |
1-1/2 cups milk |
1/2 cup heavy cream or evaporated milk |
1 tablespoon fresh chopped garlic or 1/2 teaspoon garlic powder |
1 teaspoon dried oregano |
1/2 teaspoon fresh ground black pepper |
salt to taste |
2 tablespoons fresh chopped parsley, optional |
1/4 teaspoon dry cayenne pepper, optional |
Directions:
1. Separate oysters from liquid, reserving liquid. In large skillet, melt 2 pieces butter, reserve 1/3 piece. Stir in oyster liquid, milk, cream, and oregano. Simmer 4 to 5 minutes. Set off burner, add oysters, garlic, parsley, reserved 1/3 butter, salt, and peppers; bring to a boil. As soon as it boils, turn heat to simmer, let simmer 3 to 4 minutes. Serve hot with oyster crackers. |
