This old New England recipe is unusual and a has a delicious flavor. It is essential to leave the pan uncovered during the poaching period.
Ingredients:
8 -10 sausage casings
2 cups oysters, minced
1 1/3 cups beef suet, cut into fine shreds
1 cup white breadcrumb
1 teaspoon lemon juice
2 eggs
1/8 teaspoon black pepper
1/8 teaspoon allspice
1/8 teaspoon nutmeg
1 pinch salt
1/8 teaspoon oil
Directions:
1. Mix all ingredients together. Taste for seasoning, especially salt. Stuff the mixture into sausage casings and prick each sausage with a fork.
2. Poach, uncovered, in salted water for 45 minutes; drain.
3. Brown the sausages quickly in hot oil, and serve.
