This old New England recipe is unusual and a has a delicious flavor. It is essential to leave the pan uncovered during the poaching period. Ingredients:
8 -10 sausage casings |
2 cups oysters, minced |
1 1/3 cups beef suet, cut into fine shreds |
1 cup white breadcrumb |
1 teaspoon lemon juice |
2 eggs |
1/8 teaspoon black pepper |
1/8 teaspoon allspice |
1/8 teaspoon nutmeg |
1 pinch salt |
1/8 teaspoon oil |
Directions:
1. Mix all ingredients together. Taste for seasoning, especially salt. Stuff the mixture into sausage casings and prick each sausage with a fork. 2. Poach, uncovered, in salted water for 45 minutes; drain. 3. Brown the sausages quickly in hot oil, and serve. |
