This recipe is from a church cookbook from Chestertown Maryland. I made these last night and they were great. Ingredients:
1 pint standard oyster, drained |
3/4 cup pancake flour |
1 teaspoon baking powder |
salt and pepper |
1/2 cup evaporated milk |
oil (for frying) |
Directions:
1. Comine flour, baking powder, salt and pepper. 2. Stir in milk to make batter. 3. Add drained oysters and coat thoroughly. 4. Fill fry pan with oil to depth of 1-1 1/2 inches. 5. Remove oysters with fork and drop into hot oil. 6. Fry on bothg sides to golden brown. |
