Oyster Fritters With Lemon Mustard Mayonnaise |

This is a delicious change for oyster lovers. Even non oyster lovers usually try this one and like it. A little bit of work but worth it. Ingredients:
24 oysters |
2 tablespoons lemon juice |
2 tablespoons plain flour |
2 tablespoons s r flour |
1/4 teaspoon bicarb soda |
1/2 cup water |
1 egg white |
oil for deep frying |
Directions:
1. Combine oysters and lemon juice in bowl, stand for 15 minutes; drain well. 2. Sift flours and soda into medium bowl, gradually stir in water; mix to a smooth batter (up to this stage can be done in a blender or processor). Beat egg white in small bowl until soft peaks form, gently fold into batter. Dip oysters into batter, deep-fry a few at a time in hot oil until golden brown. Drain on absorbent paper. Keep cooked oysters warm while frying remaining oysters. Serve with mayonnaise. 3. Lemon Mustard Mayonnaise: 4. Combine all ingredients in small bowl. Serves 4 |
