Ingredients:
1 pint(s) oysters chopped |
1/2 cup(s) celery chopped |
1/2 cup(s) onion chopped |
1 bay leaf |
1/4 cup(s) butter |
6 cup(s) dry bread crumbs about 24 slices |
2 eggs beaten |
1 tablespoon(s) parsley (or dried) snipped |
1 teaspoon(s) poultry seasoning |
1/2 teaspoon(s) salt |
1 dash(es) black pepper |
1 bottled clam juice |
Directions:
1. Cook celery, onion, and bay leaf in hot butter until tender. Drain oysters, reserving liquid and chop. Add chopped oysters to celery mixture and saute briefly. Discard bay leaf. Add eggs, parsley, poultry seasoning, salt and pepper to bread, top with celery mixture. Add enough oyster liquid to moisten, add clam juice if mixture is dry. Toss gently to mix. Put all in a greased 2 qt. casserole dish. Bake, covered. at 350 degrees for about 35 minutes |
