Enjoy This Tasty Oyster Chowder with Crackers and a Tossed Green Salad. Ingredients:
3 slices bacon, diced |
1 cup diced celery |
1/2 cup diced onion |
3 tablespoons butter |
4 tablespoons flour |
1 1/2 cups chicken broth |
20 to 24 ounces oysters with their liquor |
1 cup tightly packed chopped spinach leaves, about 3 to 4 ounces |
2 cups heavy cream |
1 teaspoon sea salt |
dash freshly ground black pepper |
dash nutmeg |
1 tablespoon dry sherry, optional |
Directions:
1. In a large saucepan, cook the bacon over medium-low heat until fat is rendered. 2. Add the butter, celery, and onion; continue cooking, stirring, until vegetables are tender. 3. Stir in flour until well blended. 4. Add chicken broth, oysters with liquid, and spinach. 5. Continue cooking until spinach is wilted. 6. Add cream and seasonings; heat through. 7. Stir in sherry. |
