Great on a cold fall evening, elegant enough to serve to guests! Ingredients:
1 stick butter |
1 onion, chopped |
1 bunch shallots, chopped |
1/2 bunch parsley, chopped |
2 tablespoons flour |
1 can cream of mushroom soup |
1 pint oysters |
1 cup liquid from oysters (use bottled clam juice if not enough juice to make 1 cup of liquid) |
1 package frozen artichoke hearts |
Directions:
1. Melt butter, saute onion, shallots and parsley. Stir in flour. Add mushroom soup, oyster liquid and artichoke hearts. Add oysters just before serving. Cook until oysters curl. |
