Oyster And Spinach Casserole |

My husband loves oysters - raw and cooked! This is one of his faves! Ingredients:
1 (10 ounce) package frozen chopped spinach |
1/2 pint oysters, or more if they're small |
1/4 cup grated parmesan cheese |
1/8 teaspoon garlic powder (a bit more if you like, but not too much) |
1/8 teaspoon fresh ground pepper |
dash of cayenne pepper or red pepper |
3 slices bacon, cooked and crumbled |
2 tablespoons butter, melted |
1 tablespoon lemon juice, or a bit more if you like |
Directions:
1. Cook spinach according to package directions, omitting salt; drain well. 2. Preheat oven to 450 degrees. 3. Place spinach in a lightly greased 1-quart casserole; arrange oysters over spinach. 4. Sprinkle with Parmesan cheese, garlic powder, cayenne pepper and black pepper; top evenly with bacon. 5. Combine melted butter and lemon juice; pour over oyster mixture. 6. Bake for 5 to 7 minutes. |
