Overnight Raisin-Oatmeal Pancakes |

These need to stay chilled overnight! Ingredients:
2 cups quick-cooking oats |
2 cups buttermilk |
2 eggs, beaten |
1/4 cup butter, softened |
1/3 cup raisins |
1/2 cup all-purpose flour |
2 -3 tablespoons white sugar, to taste |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/2-1 teaspoon cinnamon |
1/2 teaspoon salt |
Directions:
1. Mix together the oatmeal and buttermilk; refrigerate overnight. 2. The next morning: add in the eggs, butter and raisins; mix well. 3. In a bowl, sift ogether the flour, sugar, baking powder, baking soda, cinnamon and salt. 4. Add in the oatmeal mixture; stir to moisten. 5. Allow the batter to sit at room temperature for 20 minutes. 6. Heat the griddle to desired temperature. 7. Pour 1/4 cup of batter onto hot griddle (if the batter is too thick, add 1 Tbsp buttermilk at a time until desired consistancy). 8. Cook pancakes until bubbles appear on top; turn to brown- DELICIOUS! |
