Looking for ways to serve oatmeal uniquely, I came across several recipes on the Net. Of course I added my own touches. It's easy, very tasty ,adaptable and nutritious. It's a great recipe for the whole family ! Ingredients:
2 cups old fashioned oats ( not quick or steel cut ) |
1 cup yogurt ( opt for the thick greek variety ) soy yogurt if you want dairy free |
1 cup milk: dairy or non dairy ( almond milk, coconut milk, vanilla soy, skim etc ) |
1 tsp almond extract or to taste |
1 tsp vanilla extract or to taste |
shake of cinnamon |
2 tbs liquid sweetener ( honey, sugar free syrup, maple syrup ) |
toppings: ( optional but nice ) |
crushed nuts, fresh berries, chopped fresh fruit, dried fruit, raisins, dollop of fruit preserve, creme fraiche , more cinnamon, dash nutmeg or whatever you want |
Directions:
1. Mix all overnight oatmeal ingredients together and stir very well 2. Place in an airtight container and chill overnight or at least 8 hours 3. Prior to serving, stir mixture again 4. Serve in dishes and add sweetener and or toppings of choice |
