Overnight Honey-Almond Multigrain Cereal |

From Cooking Light. Plan ahead, you start this the night before. A healthy breakfast that's quick to fix in the morning using your microwave. Makes one large serving. Ingredients:
1/3 cup steel cut oats |
2 tablespoons uncooked pearl barley (not quick barley) |
1 1/4 cups water |
1/8 teaspoon salt |
1/4 teaspoon cinnamon |
1/8 teaspoon nutmeg |
1 tablespoon sliced almonds, toasted |
1 tablespoon honey |
Directions:
1. Combine oats, barley, and water in microwave-safe 4-cup bowl. Cover and refrigerate 4 hours or overnight. 2. Uncover bowl, stir in salt. Microwave, uncovered, 6 minutes or until most of liquid is absorbed, stirring well after 3 minutes. (Mine took about 9 minutes). 3. Stir in cinnamon and nutmeg. Top with almonds and honey. |
