Overnight Blueberry Coffee Cake |

I like this recipe when I have guests because I can make it the night before and it's all ready to go into the oven in the morning. Ingredients:
2 cups all purpose flour |
1 cup sugar |
1/2 cup packed brown sugar |
1 tsp baking powder |
1 tsp baking soda |
1 tsp ground cinnamon |
1/2 tsp salt |
1 cup buttermilk |
2/3 cup butter, melted |
2 eggs, beaten |
1 cup fresh or frozen blueberries |
topping |
1/2 cup packed brown sugar |
1/2 cup chopped nuts |
1 tsp ground cinnamon |
Directions:
1. In a large bowl, combine flour, sugars, baking powder, baking soda, cinnamon and salt. In a separate bowl, combine buttermilk, butter and eggs; add to dry ingredients and mix until well blended. Fold in berries. 2. Pour into a greased 13 x 9 inch baking pan. 3. Combine topping ingredients; sprinkle over batter. 4. Cover and refrigerate overnight. 5. In the morning, uncover and bake at 350 for 45 to 50 minutes or until cake tests done. |
