Ingredients:
1 medium zucchini, chopped
1 medium squash, chopped
1 medium red pepper, chopped
8 oz. asparagus, chopped
1 onion
2 tablespoons olive oil
Directions:
1. Chop zucchini, squash, red pepper, asparagus and onion into bite-sized pieces.
2. Toss with olive oil
3. Season to taste with salt and pepper if desired.
4. Roast at 450 for 30 minutes, stirring occasionally.
