Oven roasting sweet potatoes actually brings out the natural sweetness. Sweet Potatoes are naturally rich in potassium. I found this recipe at Eating Well Magazine. Ingredients:
1 large sweet potato, peeled and cut into wedges |
2 teaspoons canola oil |
1/4 teaspoon salt |
1 pinch cayenne pepper |
Directions:
1. Preheat oven to 450°F 2. Toss sweet potato wedges with oil, salt and pepper. 3. Spread the wedges out on a rimmed baking sheet. 4. Bake until browned and tender, turning once, about 20 minutes total, or until tender. 5. Serves 2. |
