Oven Roasted Vegetarian Stew |

Vegetables by weight so it doesn't matter what size your potatoes are or what kind of carrots you are trying to use up. I tend to make this when I come home from the store with a bag of baby carrots, and find two more already in the fridge! Uses vegetarian brown gravy mix. Ingredients:
2 lbs potatoes |
1 lb carrot |
1/2 lb celery |
1/2 lb onion |
3 fat free brown gravy mix |
Directions:
1. Spray a large roasting pan with non-stick cooking spray. 2. Scrub, but do not peel potatoes, carrots, celery. Cut into bite sized pieces. Add to pan. 3. Peel and quarter onions. Add to pan. 4. Roast at 400 degrees for 1 hour, checking and turning at 15 minute intervals. 5. Transfer roasted vegetable to serving dish. 6. Prepare gravy mix per package directions, pour over veggies. |
