EASY! Ingredients:
1 zucchini |
1 yellow squash |
1 red bell pepper |
1 yellow bell pepper |
1 lb fresh asparagus |
1 red onion |
3 tbsp olive oil |
1 tsp salt |
1/2 tsp pepper |
Directions:
1. Heat oven to 450. 2. Cut all vegetables into bite sized pieces. 3. Toss with olive oil, salt & pepper (add other spices if desired) in a large roasting pan. 4. Roast for 30 minutes. |
