1 large potato, cut in 1-inch slices |
1 yam, cut in 1-inch slices |
2 carrots, cut in 1-inch rounds |
1 onion, cut in 1/2-inch wedges |
1 green and 1 red bell pepper, cut in 1-inch slices |
2 t olive oil |
1 t thyme |
1 t oregano |
Directions:
1. Preheat oven to 400 degree. 2. Wash and cut all vegetables; place in a large bowl. 3. Sprinkle with spices and oil; mix well. 4. Spread vegetables evenly in a large baking pan. 5. Roast 1-hour. 6. Stir occasionally. |
