Oven Roasted Tomato Sauce |

This is a sauce that can be made without using a single pot. Just a jelly roll pan and a bowl Ingredients:
2 lbs cherry tomatoes, halved |
1 small red onion, diced small |
3 cloves garlic, diced |
1/2 teaspoon thyme |
1/2 teaspoon oregano |
1 pinch crushed red pepper flakes |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
1/2 cup extra virgin olive oil |
Directions:
1. Pre heat oven to 375. 2. put tomatoes, onions, and garlic on a jelly roll pan. 3. add olive oil and mix with your hands till everything is covered with olive oil. 4. add thyme, oregano, red pepper flakes, salt and pepper. 5. bake for about 35 - 40 minutes, stirring every 8 minutes. 6. after cooking remove from oven and empty into a large bowl. 7. muddle a bit with a wooden spoon and serve over pasta. |
