Oven Roasted Sweet Veggies |

I stumbled upon this recipe one night when I wanted something different than our usual mix of veggies. It comes out remarkably sweet and the veggies are soft, but still crisp. It is super sweet and very colorful and can be served with a variety of dishes. Ingredients:
1 sweet onion |
1 red pepper |
1 large zucchini (or 2 smaller) |
1 large yellow (or summer) squash (or 2 smaller) |
4 tablespoons extra virgin olive oil |
salt, pepper and garlic powder (to taste) |
**note** i use garlic powder for the distinct enhanced flavor it gives. fresh garlic gives the dish an overwhelming garlic flavor. |
Directions:
1. Slice all vegetables into chunks, none thinner than a quarter of an inch. 2. Place all veggies onto baking tray. (Tray can be lined with foil for EASY clean up) 3. Pour oil onto veggies 4. Season to taste with salt, pepper and garlic powder. (I do a light sprinkle with all) 5. Using hands or spoon, gently toss the veggies to coat with mixture. 6. Broil on high for 10 minutes, checking once to make sure the veggies aren't burning. 7. When veggies are starting to brown, remove and stir them so juices from veggies combine. 8. Serve. **Also great next day or combined with rice or pasta** |
