Oven-Roasted Sweet Potatoes and Onions |

Ingredients:
4 medium-size sweet potatoes (about 2 1/4 pounds) |
2 medium-size sweet onions |
1 tablespoon olive oil |
1/2 teaspoon garlic pepper seasoning |
1/4 teaspoon salt |
vegetable cooking spray |
Directions:
1. Peel sweet potatoes, and cut each into 2-inch pieces. Cut onions into 1-inch pieces. 2. Toss together sweet potato, onion,oil, and seasonings in a 15- x 10-inch jellyroll pan coated with cooking spray. 3. Bake at 425° for 35 minutes or until tender, stirring mixture occasionally. |
