Oven Roasted Sweet Potatoes |

An easy and healthy side dish; works great with roasted chicken or pork. Ingredients:
2 medium sweet potatoes, peeled and sliced 1 inch thick |
1 tablespoon extra virgin olive oil |
1 tablespoon chili seasoning mix |
salt and pepper |
Directions:
1. Set oven to 350 degrees F. Blanch the potatoes in boiling water until tender firm, not soft. Remove and place on paper towels until all the water is absorbed. Heat a shallow oven proof pan in the oven until hot. Toss the potatoes with the olive oil and place them in a single layer in the hot pan, sprinkle with chili seasoning and salt and pepper.
