Oven Roasted Sweet Potatoes |

This is a nice change for a side dish. Especially nice in the cooler weather. as most potato recipes you can add anything and make it better. Ingredients:
4 cups coarsely chopped sweet potatoes |
1 large vidalia onion sliced |
1 large red pepper cut into strips |
2 garlic cloves, sliced |
3 tablespoons olive oil |
1 teaspoon dried thyme |
1 tablespoon balsamic vinegar |
fresh parsley |
course salt and fresh ground pepper |
Directions:
1. In a large bowl, combine potatoes, red pepper, onion, garlic and thyme; toss well to coat. 2. Pour veggies into shallow roasting or jelly roll pan. 3. Bake in 425°F oven, turning frequently, for about 40 to 45 minutes or until veggies are soft and golden brown. 4. Drizzle with vinegar. 5. Season with salt and pepper. 6. Excellent with candied walnuts thrown in. |
