Oven Roasted Sweet Potato W Mediterranean Herbs |

If you make the herb mixture and keep it on hand it's really easy to whip up a batch of these in a jiffy. I made these for Xmas and all the leftovers got taken home by guests! Very good and healthy to boot!~ Ingredients:
dry herb mixture |
1 tbsp rosemary |
1 tbsp thyme |
1 tbsp onion salt |
1/2 tbsp sage |
1/2 tbsp basil or parsley |
3 large sweet potatoes |
extra virgin olive oil |
kosher salt |
fresh black pepper |
Directions:
1. Preheat oven to 450 degrees. 2. Grind all dry herbs with a mortar and pestle to blend. 3. Scrub and slice potatoes into spears. 4. In a large bowl, generously pour oil over spears and then sprinkle generously with herbs and salt and pepper to taste. 5. Place on a cookie sheet or roasting pan and roast in the center of the oven for about 40 minutes, turning once about 2/3 the way through. 6. * keep remaining herbs in a tin or small jar for future use! |
