Oven-Roasted Smashed Potatoes

A baby or new potato is a young potato of any variety which hasn't yet fully developed its starch. This translates into a waxier texture that's perfect for roasting.
Ingredients:
2 (24-oz.) packages baby yukon gold potatoes
1 medium-size sweet onion, cut into 1/2-inch pieces
1 tablespoon olive oil
1 teaspoon chopped fresh rosemary
1 teaspoon kosher salt
2 teaspoons fresh lemon juice
1/4 teaspoon dried crushed red pepper
Directions:
1. Preheat oven to 400°. Toss together all ingredients in a broiler pan until well coated. Bake 40 minutes or until tender and browned. Gently smash potatoes with a fork.
