Oven-Roasted Smashed Potatoes |

A baby or new potato is a young potato of any variety which hasn't yet fully developed its starch. This translates into a waxier texture that's perfect for roasting. Ingredients:
2 (24-oz.) packages baby yukon gold potatoes |
1 medium-size sweet onion, cut into 1/2-inch pieces |
1 tablespoon olive oil |
1 teaspoon chopped fresh rosemary |
1 teaspoon kosher salt |
2 teaspoons fresh lemon juice |
1/4 teaspoon dried crushed red pepper |
Directions:
1. Preheat oven to 400°. Toss together all ingredients in a broiler pan until well coated. Bake 40 minutes or until tender and browned. Gently smash potatoes with a fork. |
