Oven Roasted Root Vegetables |

An assortment of root vegetables, garlic cloves and fresh rosemary are tossed in Hellmann's® Real Mayonnaise and roasted to perfection in this easy seasonal side dish. Ingredients:
1/3 cup hellmann's® or best foods® real mayonnaise |
2 pounds assorted root vegetables (carrots, parsnips, beets, onions, and or sweet potatoes) peeled and cut into bite-size pieces |
10 cloves garlic, peeled |
1 tablespoon chopped fresh rosemary |
1/4 teaspoon coarsely ground black pepper |
Directions:
1. Preheat oven to 425 degrees F (220 degrees C). In large bowl, combine all ingredients until vegetables are well-coated. In large shallow roasting pan or jelly-roll pan, evenly spread vegetables. 2. Roast stirring occasionally, 35 minutes or until vegetables are tender and golden. Sprinkle, if desired, with chopped fresh parsley. |
