OVEN ROASTED POTATOES WITH BACON AND ROSEMARY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Darby Estate in Wills Point, Texas in 1982.
Ingredients:
6 pounds new potatoes quartered
1/2 cup unsalted butter softened
8 slices bacon fried and chopped
1/4 cup extra virgin olive oil
2 tablespoons dried rosemary
1 teaspoon salt
2 teaspoons freshly ground black pepper
Directions:
1. Par boil potatoes 15 minutes.
2. Preheat oven to 450 then drain and allow to cool a few minutes.
3. Coat bottom and sides of a shallow pan with the butter.
4. Toss potatoes, bacon, olive oil, seasonings and rosemary together and put into shallow pan.
5. Roast turning often for 60 minutes.
