This method of cooking potatoes gives you a very crisp skin and fluffy inside. The secret is to cook the potatoes for a long time in a low heat oven.
Ingredients:
4 large potatoes
1 tablespoon olive oil
1 teaspoon salt
Directions:
1. Clean potatoes well.
2. Prick potatoes all over with a fork.
3. Roll potatoes in olive oil.
4. Roll potatoes in salt. Careful - not too much salt!
5. Place potatoes directly onto oven rack.
6. Roast for 2 hours in a 180 degrees celcius oven.
7. Serve with ratatouille or any other topping of your choice.
