Oven Pancake With Sausage And Pears |

Plan to get guests at the table before you pull this out of the oven; the pancake deflates quickly... but it is so delicious... Ingredients:
1/4 cup butter, cut up |
4 eggs |
1 cup milk |
1 cup all purpose flour |
1/8 teaspoon salt |
1 medium onion, cut into wedges |
1 tablespoon butter |
8 oz cooked bratwurst or other cooked smoked sausage links, bias sliced |
2 large green pears, cored and cut into 1 inch pieces (or 1 pear and 1 apple ) |
1/3 cup dried tart cherries |
maple syrup |
Directions:
1. Preheat oven to 400 degrees. 2. Place the 1/4 cup butter in a 2 1/2 quart oval or round baking dish. 3. Place dish in oven for 5 minutes or until butter melts. 4. Meanwhile, in a large boel beat eggs with a electric mixer until combined. 5. Add milk, flour and salt; beat until smooth. 6. Immediately pour batter over butter in the hot baking dish. 7. Bake about 25 minutes or until puffed and well browned. 8. Meanwhile, in a large saucepan cook onion wedges in the hot butter over medium heat about 5 minutes or until tender. 9. Add sausage slices; cook until lightly browned. 10. Stir in pears or apples and cherries' add salt and pepper to taste. 11. Cook about 5 minutes or until fruit is slightly softened. 12. To serve, spoon sausage mixture into center of puffed pancake. 13. Cut into wedges. 14. Drizzle with maple syrup. |
