These are delicious. I found this recipe on a cooking site that a friend directed me to and had to try them the very next day. They are very easy to make and totally yummy. Would be great for a crowd. I am going to try it on heavy-duty foil done on the grill, not covered up, just open to the air. So goooooood! Ingredients:
1 lb small red potato, scrubbed (about 10) |
kosher salt & fresh ground pepper |
olive oil |
1/2 cup freshly grated parmesan cheese (or more if you like) |
1 tablespoon chopped fresh chives |
minced garlic |
chopped rosemary or basil |
seasoning salt |
sour cream, when you serve it |
Directions:
1. Wash potatoes and put in a saucepan with enough water to cover by 1-inch; add 1 teaspoon of salt. 2. Bring to boil and simmer till tender when pierced with a fork; drain and cool slightly. 3. Oil the bottom of a baking pan or dish and put potatoes in the bottom. 4. Pierce each potato with the tines of a fork, twist a bit, and gently squeeze the sides of each potato to pop it open slightly (as you would for a baked potato). 5. Season generously with salt and pepper; drizzle a little olive oil over each potato. 6. Roast the potatoes at about 400 degrees for about 15 minutes and then sprinkle with cheese. 7. Continue roasting for another 10-15 minutes till golden brown and crisp. 8. Sprinkle with chives and serve immediately. |
