These crunchy-coated jumbo shrimp are made lite by frying them in the oven. Great with baked fries,coleslaw and cocktail sauce. Ingredients:
3/4c. dry italian-seasoned bread crumbs |
2tbs. all purpose flour |
1tbs.lemon zest |
2tsp dried oregano |
2 egg whites |
11/2lbs jumbo shrimp,peeled and deveined,butterflied,tails left on |
Directions:
1. Preheat oven to 400 degrees. Line jellyroll pan with foil. In bowl, combine crumbs,flour,zest and oregano. Whisk whites until frothy. Add shrimp,toss to coat. Coat shrimp in crumb mixture. Arrange on pan;generously coat with cooking spray. Bake,turning once and coating with cooking spray,until opaque,4 mins. a side. |
