This old stand by is great for potluck, camping and freezes very well. You can serve it with pork, chicken or shrimp. Ingredients:
2 cups long grain rice, uncooked |
1 1/2 oz onion soup mix (1 pkg) |
1/2 vegetable oil - i quite often use only 1/4 cup oil but the taste is better with the 1/2 cup |
1/4 cup soy sauce - low sodium if you can find it |
boiling water |
10 oz can sliced mushrooms |
3 green onions, chopped |
Directions:
1. Pour the rice into a 2-quart greased casserole or 9x13 pan. 2. In a large bowl or 4-cup measuring cup, combine the onion soup, oil and soy sauce. Add enough boiling water to make 4 cups. 3. Pour the liquid over the rice, add the drained mushrooms and green onions and stir lightly with a fork. 4. Cover and bake at 350 for 1 hour. 5. (It cooks faster in the 9x13 pan so check earlier) |
