Oven-Fried Parmesan Chicken |

Really, really good, low carb, lower fat crispy chicken! Ingredients:
1 egg, lightly beaten |
2 tablespoons milk |
1/3 cup grated parmesan cheese |
1/3 cup dry breadcrumbs |
1 teaspoon dried oregano, crushed |
1/2 teaspoon paprika |
1/4 teaspoon salt |
1/8 teaspoon fresh ground black pepper |
2 1/2 lbs chicken pieces (cut breast halves in two horizontally) |
Directions:
1. Heat oven to 375 degrees. Grease a large shallow baking pan; set aside. 2. m8. 3. In a small bowl, combine egg and milk. In a shallow dish, combine Parmesan cheese, bread crumbs, dried oregano, paprika, salt, and pepper. 4. Dip chicken into egg mixture; coat with crumb mixturte. Arrange in prepared baking pan, malking sure pieces do not touch. Coat chicken with nonstick cooking spray. 5. Bake at 375 degrees for 45-55 minutes or until chicken is tender and no longer pink. Do not turn pieces during baking. |
