This comes from the 1988 Copper Country Recipes 12th Edition Cookbook, by the Calumet Woman's Club, Calumet, MI & was submitted by Minnie Vitton. Ya just gotta love those regional &/or church cookbooks! Ingredients:
1 whole chicken, cut-up |
1/4 cup lemon juice |
garlic salt, to taste |
1/2 cup sour cream |
1 cup breadcrumbs or 1 cup crushed corn flakes |
Directions:
1. Marinate chicken in lemon juice & garlic salt for 1 hour, turning frequently. 2. Prehaet oven to 350. 3. Lightly coat a 9 X 13 pan with cooking spray. 4. Dip chicken pieces in sour cream & then roll in crumbs. 5. Place each piece in pan & cover tightly with aluminum foil. 6. Bake for 45 minutes. 7. Remove foil - increase oven temp to 450. 8. Bake an additional 15 minutes. |
