Tossing in butter and garlic after cooking makes these fries unbelievably rich and delicious. Ingredients:
3 lbs. peeled baking potatoes, cut into 1/4-inch thick strips |
4 tsp. vegetable oil |
3/4 tsp. salt |
cooking spray |
2 tbsp. butter |
8 garlic cloves, minced |
2 tbsp. finely chopped fresh parsley |
2 tbsp. freshly grated parmesan cheese |
Directions:
1. Preheat oven to 400 degrees. 2. Combine potatoes, vegetable oil and salt in a large zip-top plastic bag, tossing to coat. 3. Arrange potatoes in a single layer on a baking sheet coated with cooking spray. 4. Bake at 400 for 50 minutes or until potatoes are tender and golden brown, turning after 20 minutes. 5. Place butter and garlic in a large nonstick skillet; cook over low heat for 2 minutes, stirring constantly. 6. Add potatoes, parsley, and cheese to pan; toss to coat. 7. Serve immediately. |
