From The Boston Globe Cookbook. For some reason I just don't like frying things so this recipe is perfect for me. Ingredients:
2 lbs fresh haddock fillets |
3/4 cup milk |
1 cup breadcrumbs |
1/4 cup grated parmesan cheese |
1/4 teaspoon dried thyme |
1/4 cup melted butter or 1/4 cup margarine |
Directions:
1. Cut fillets into serving-size pieces. Dip each in milk , then in mixture of the breadcrumbs, cheese and thyme. 2. Place in a single a single layer in an oiled baking dish. Drizzle melted butter over fish. Bake at 425 degrees for 10 to 12 minutes, until fish flakes easily. |
