A crisp eggplant without frying. Ingredients:
3 tbs mayonnaise |
1 tbs water |
2 tbs lemon juice |
pinch garlic powder |
1/3 cup grated parmesan cheese |
1/3 cup bread crumbs |
1 medium eggplant ( 1 1/4 pounds) |
Directions:
1. Spray a nonstick cookie sheet pan liberally with vegetable cooking spray. 2. Blend mayonnaise, water lemon juice, and garlic ina shallow plate. Combine Parmesan cheese and bread crumbs on wax paper. Preheat oven to 450 degrees. 3. Cut the eggplant lengthwise into 1/2 inch thick slices. dip each slice into the mayonnaise mixture turning to coat both sides then press both sides lightly into crumb mixture. Arrange each crumb coated slice in a single layer on the cookie sheet. 4. Bake in a preheated 450 degrees for 5 minutes or more until coating is crisp and eggplant is tender. |
