Oven-Fried Chicken With Biscuits |

Another recipe from Strictly Thrifty. Ingredients:
1/4 cup shortening |
1/4 cup butter or 1/4 cup margarine |
1/2 cup bisquick baking mix |
1 teaspoon salt |
1 teaspoon paprika |
1/4 teaspoon pepper |
3 lbs broiler-fryer chickens, cut up |
whole cloves |
1 (16 ounce) can canned peach halves, drained |
2 cups bisquick baking mix |
1/2 cup cold water |
Directions:
1. Heat oven to 425*. 2. Melt shortening and butter in oven in oblong pan, 13x9x2 . 3. Blend 1/2 cup baking mix, salt, paprika,and pepper; coat chicken pieces. 4. Place chicken skin side down in shortening mixture. 5. Bake uncovered 35 minutes. 6. Insert a clove in each peach. 7. Stir 2 cups baking mix and the water to a soft dough. 8. Gently smooth dough into a ball on floured cloth-covered board. 9. Knead 5 times then roll dough 1/2 thick. 10. Cut with floured 2 cutter. 11. Turn chicken, pushing pieces to one side of pan. Spoon excess fat from pan. 12. Place biscuits in single layer next to chicken. 13. Arrange peach halves on top of chicken. 14. Bake 15 minutes longer or until biscuits are light brown and chicken is tender. 15. Serve with Green Peas & Onions, Spinach Salad and Chocolate Sundaes. |
