Very easy, and so good-even the kids like them. The original recipe uses Bisquick, but I use a whole grain baking mix from Trader Joe's. Both delicious, but I like to sneak in the whole grain mix, and the kids can't tell the difference.
Ingredients:
1 1/3 cup baking mix, like bisquick, or the whole grain one i mentioned, if you can find it
1 cup grated parmesan cheese
3/4 tsp garlic powder
3/4-1 tsp salt
3/4 tsp paprika
1 1/2 lbs chicken tenders
2 egg, slightly beaten
3 tbs butter or margarine, melted (this is to drizzle over the chicken before baking. i spray them with a bit of canola oil instead.)
Directions:
1. Heat oven to 450ºF.
2. Line baking sheet with foil and spray with cooking spray.
3. Mix baking mix, parmesan cheese, garlic powder, salt and paprika in 1-gallon ziploc bag.
4. Dip some of the tenders into egg, then drop into the ziploc bag.
5. Seal bag and shake to coat, put tenders on baking sheet, repeat until you've coated all of the tenders.
6. Drizzle the butter over chicken, or spray each one with canola oil.
7. Bake 6 minutes, turn each one over with tongs, and continue baking for 8 minutes.
